Description

This Addicting Toffee Chex Mix is a buttery, caramel-coated snack that delivers the perfect sweet crunch. Easy to make, impossible to resist, and ideal for holidays, parties, gifting, or cozy snacking moments.


Ingredients

  • 8–9 cups Chex cereal (Rice Chex or mix of Rice & Corn)

  • 1 1/2 cups nuts (pecan halves or walnuts)

  • 1 cup unsalted butter (226 g / 2 sticks)

  • 1 1/2 cups packed brown sugar

  • 1/2 cup light corn syrup

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 tsp fine salt


Instructions

  1. Preheat oven to 250°F (120°C). Line one or two large rimmed baking sheets with parchment.

  2. In a very large heatproof bowl, combine Chex cereal and nuts.

  3. In a medium saucepan, melt butter, brown sugar, and corn syrup over medium-high heat. Stir until smooth, then bring to a rolling boil and cook 5 minutes without stirring.

  4. Remove from heat and whisk in vanilla, salt, and baking soda. Mixture will foam and lighten.

  5. Immediately pour the foaming toffee over the cereal mixture. Toss quickly with a silicone spatula until evenly coated.

  6. Spread mixture onto the prepared baking sheet(s). Bake 45–60 minutes, stirring every 15 minutes.

  7. Remove from the oven and cool on the pan for 30–45 minutes until crisp.

  8. Break into pieces and store airtight for up to 1 week.

Notes

Warm your mixing bowl briefly to help prevent the toffee from seizing.

Swap nuts or omit for a nut-free version.

Add pretzels for extra crunch.

A pinch of flaky sea salt on top makes this even more addictive.
