Description
This Apple Cranberry Salad with Turkey is fresh, filling, and full of cozy fall flavor. Crisp apples, sweet cranberries, crunchy walnuts, and tender turkey are tossed with a simple apple cider vinaigrette for an easy, satisfying meal.
Ingredients
For the Salad
3 hearts romaine lettuce, chopped
1 large apple, diced
1/2 cup sharp cheddar cheese, cubed
1 cup deli turkey, diced
1/3 cup dried cranberries
1/3 cup walnuts
For the Apple Cider Vinaigrette
2 tablespoons olive oil
2 tablespoons apple cider
2 tablespoons apple cider vinegar
Dash of salt
Instructions
In a small bowl or jar, combine olive oil, apple cider, apple cider vinegar, and salt. Whisk well (or shake with the lid on) until fully combined.
In a large salad bowl, add romaine lettuce, apple, cheddar cheese, turkey, dried cranberries, and walnuts.
Drizzle the vinaigrette over the salad and gently toss until evenly coated.
Serve immediately for the best texture and flavor.
Notes
Crisp apples like Honeycrisp or Fuji work best.
Toast the walnuts for extra flavor if time allows.
For meal prep, store the dressing separately and toss just before serving.
Leftover roasted or rotisserie turkey works beautifully here.
