For the Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces

  • ½ cup cornstarch

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon garlic powder

  • ¼ teaspoon paprika

  • ¼ cup vegetable oil, for frying

For the Rice & Toppings

  • 2 cups cooked jasmine rice

  • 1 cup shredded lettuce

  • 1 cup diced cucumber

  • ½ cup shredded carrots

  • ¼ cup chopped green onions

  • Sesame seeds, for garnish (optional)

For the Sauce

  • ½ cup mayonnaise

  • 2 tablespoons sweet chili sauce

  • 1 tablespoon sriracha, or to taste


Instructions

  1. In a large bowl, mix the cornstarch, salt, black pepper, garlic powder, and paprika. Add the chicken and toss until evenly coated.

  2. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer and cook for 5–7 minutes, turning occasionally, until golden brown and fully cooked. Remove from heat.

  3. In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust spice level as desired.

  4. To assemble, divide the cooked jasmine rice among four bowls. Top with crispy chicken, lettuce, cucumber, carrots, and green onions.

  5. Drizzle generously with the Bang Bang sauce and sprinkle with sesame seeds if using. Serve immediately.

Notes

Chicken can be swapped for shrimp or tofu if desired.

Store leftover chicken in an airtight container for up to 3 days.

Keep vegetables separate for best texture when meal prepping.
