These BBQ Bacon Cheeseburger Stuffed Peppers are juicy, cheesy, and packed with bold BBQ flavor—perfect for busy weeknights or family dinners. It’s all the comfort of your favorite burger, but in a fun, veggie-packed format.
Ingredients
4 large bell peppers (red, green, or yellow)
1 lb ground beef
½ cup cooked bacon, crumbled
½ cup BBQ sauce
½ cup shredded cheddar cheese
¼ cup diced onions
¼ cup diced pickles
Salt and pepper to taste
Fresh parsley, chopped (optional garnish)
Instructions
Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Arrange upright in a baking dish.
In a skillet, cook ground beef over medium heat until browned. Drain excess grease.
In a large bowl, mix cooked beef, crumbled bacon, BBQ sauce, diced onions, pickles, salt, and pepper.
Spoon the mixture evenly into the hollowed bell peppers.
Top each pepper with shredded cheddar cheese.
Cover dish with foil and bake for 25 minutes. Remove foil and bake another 5–10 minutes until cheese is melted and bubbly.
Garnish with fresh parsley and serve hot!
Notes
Want extra spice? Add jalapeños or spicy BBQ sauce to the filling.
For a make-ahead option, prep the filling the night before and refrigerate.
Ground turkey or chicken can be swapped in for a leaner version.
Leftovers reheat well in the microwave or oven.
