Description
This Big Mac Casserole is a healthy, Whole30-friendly twist on the classic burger. Made with seasoned ground beef, crispy potatoes, fresh lettuce, tomatoes, and a creamy special sauce, it’s the perfect family-friendly weeknight dinner or meal prep option.
Ingredients
1 lb lean ground beef
1 cup white onion, diced
2 russet potatoes, diced (about 4 cups)
1 can diced tomatoes, drained well
1 green bell pepper, diced
1/2 cup chopped dill pickles
1 tbsp white sesame seeds
1/2 cup homemade Special Sauce
For Topping:
Shredded romaine lettuce
Additional diced white onion
Additional chopped dill pickles
Sesame seeds
Diced fresh tomatoes
Extra drizzle of Special Sauce
Instructions
Preheat oven to 350°F.
In a large skillet over medium heat, cook diced onion and ground beef until beef is browned and onion is translucent.
Drain excess grease and stir in the Special Sauce.
In a large casserole dish, combine diced potatoes, green pepper, chopped pickles, and well-drained diced tomatoes.
Add the beef mixture to the casserole dish.
Sprinkle sesame seeds over the mixture and stir to combine evenly.
Spread into an even layer and cover tightly with foil.
Bake for 1 hour, or until potatoes are fork tender.
Remove from oven and top with shredded lettuce, tomatoes, onions, pickles, sesame seeds, and extra Special Sauce before serving.
Notes
Drain the tomatoes very well to prevent excess moisture.
For stronger burger flavor, use fresh tomatoes as topping instead of canned inside.
If not Whole30 or dairy-free, add 1 cup shredded cheddar during the last 30 minutes of baking.
Leftovers store well for up to 4 days in the refrigerator.
