Ingredients
1/2 cup rolled oats
1 cup almond flour
2 scoops vanilla protein powder
1/4 cup cream cheese, softened
1/4 cup Greek yogurt
2 tbsp honey or maple syrup
1/2 cup fresh or frozen blueberries
1 tsp vanilla extract
1/4 tsp salt
Instructions
In a mixing bowl, combine rolled oats, almond flour, and vanilla protein powder.
In a separate bowl, beat the cream cheese, Greek yogurt, honey or maple syrup, vanilla extract, and salt until smooth.
Gently fold in the blueberries.
Add the dry ingredients to the wet mixture and stir until a thick dough forms.
Roll tablespoon-sized portions into balls and place them on a parchment-lined sheet.
Refrigerate for at least 30 minutes before enjoying.
Store in an airtight container in the fridge for up to 1 week or freeze for longer.
Notes
If the mixture feels sticky, add a little more almond flour.
Too dry? Mix in a spoonful of Greek yogurt.
Frozen blueberries work well but pat them dry for best texture.
Add crushed graham crackers for extra cheesecake flavor!
