This Blueberry Cottage Cheese Breakfast Bake is creamy, protein-packed, and naturally sweetened with blueberries and maple syrup. A cozy, make-ahead breakfast that tastes like dessert but fuels your day.
Ingredients
1 cup cottage cheese
2 eggs
1/4 cup maple syrup or honey
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 cup oat flour
1/4 tsp baking powder
1/2 cup fresh or frozen blueberries
Pinch of salt
Butter or oil, for greasing
Instructions
Preheat oven to 350°F (175°C). Lightly grease a small baking dish with butter or oil.
In a medium bowl, whisk together cottage cheese, eggs, maple syrup (or honey), vanilla, and cinnamon until smooth.
Stir in oat flour, baking powder, and salt until fully combined.
Gently fold in the blueberries.
Pour mixture into the prepared dish and spread evenly.
Bake for 30–35 minutes, or until the center is set and the top is golden.
Let cool slightly before serving. Enjoy warm or chilled.
Notes
Use ricotta instead of cottage cheese for a slightly richer bake.
Frozen blueberries work great; no need to thaw.
Add a sprinkle of cinnamon sugar on top for a caramelized crust.
