This Blueberry Thyme Chicken is a sweet and savory dinner recipe that’s as elegant as it is easy. Juicy chicken breasts are seared, baked, and finished with a jammy blueberry-balsamic-thyme glaze. Perfect for weeknights or special occasions!
Ingredients
4 boneless, skinless chicken breasts (6 oz each)
1 cup fresh blueberries (reserve a few for garnish)
2 tablespoons balsamic vinegar
1 tablespoon honey
2 teaspoons fresh thyme leaves (or 1 tsp dried thyme)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil
Instructions
Preheat oven to 375°F (190°C).
Pat chicken breasts dry and season both sides with salt and pepper.
In a medium saucepan, combine blueberries, balsamic vinegar, honey, and thyme. Cook over medium heat, gently smashing blueberries until a chunky sauce forms (about 5 minutes).
Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2–3 minutes per side until golden brown.
Pour blueberry sauce over chicken and transfer skillet to the oven.
Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
Rest chicken for 3 minutes before serving. Garnish with extra thyme and blueberries if desired.
Notes
Frozen blueberries can be used (no need to thaw first).
If you don’t have an oven-safe skillet, transfer chicken to a baking dish before baking.
Serve with mashed potatoes, wild rice, or roasted vegetables.
