Breakfast Pancake Poppers

  • Author: Mounia
  • Total Time: 15 minutes
  • Yield: 20 mini pancake poppers 1x

Description

Breakfast Pancake Poppers are fluffy, bite-sized pancakes baked to golden perfection. They’re easy to make, kid-friendly, and perfect for busy mornings, meal prep, or cozy weekend breakfasts.

Ingredients

Scale
  • 1 cup all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ¾ cup milk

  • 1 large egg

  • 2 tablespoons butter, melted

  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 375°F and generously grease a mini muffin pan.

  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

  • In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.

  • Pour the wet ingredients into the dry ingredients and gently stir until just combined.

  • Fill each mini muffin cup about ⅔ full with batter.

  • Bake for 10–12 minutes, until the tops are lightly golden and set.

  • Cool slightly and serve warm with syrup or your favorite toppings.

Notes

Avoid overmixing the batter to keep the pancake poppers light and fluffy.

These store well in the fridge for up to 4 days and freeze beautifully for longer storage.

Reheat in the microwave for 15–20 seconds for a quick breakfast.
