Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
1 large egg
2 tablespoons butter, melted

Instructions
Preheat the oven to 375°F and generously grease a mini muffin pan.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined.
Fill each mini muffin cup about ⅔ full with batter.
