Ingredients
For the Bruschetta Topping:
4 Roma tomatoes, cored and diced
¼ cup fresh basil, chopped
1 garlic clove, minced
1 tablespoon extra virgin olive oil
1–2 teaspoons balsamic vinegar
Salt, to taste
For the Cheese Mixture:
8 oz feta cheese, crumbled
4 oz cream cheese, softened
½ cup sour cream
1 garlic clove, minced
1 tablespoon fresh lemon juice
1 tablespoon olive oil
Salt, to taste
For Garnish:
Chopped basil
Red pepper flakes
Freshly grated Parmesan cheese
Instructions
Prepare the Bruschetta:
In a bowl, mix diced Roma tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and a pinch of salt. Toss gently and let sit for 10 minutes to marinate.Make the Cheese Base:
In a food processor, blend feta, cream cheese, sour cream, garlic, lemon juice, and olive oil for 3–4 minutes until smooth and creamy. Taste and adjust salt if needed.Assemble the Dip:
Spread the cheese mixture evenly in a shallow serving dish. Top with the marinated bruschetta mixture.Garnish & Serve:
Finish with extra basil, red pepper flakes, and Parmesan. Serve with toasted baguette slices or crackers.
Notes
For a thicker dip, remove tomato seeds before dicing.
Greek yogurt can replace sour cream for a lighter version.
Keep the bruschetta topping separate until serving if making ahead.
