Description

This creamy Bruschetta Dip blends a rich cheese base with fresh tomatoes, basil, garlic, and a touch of balsamic. A delicious, crowd-pleasing appetizer perfect for parties, holidays, or easy entertaining.

For the Bruschetta Topping:

  • 4 Roma tomatoes, cored and diced

  • ¼ cup fresh basil, chopped

  • 1 garlic clove, minced

  • 1 tablespoon extra virgin olive oil

  • 12 teaspoons balsamic vinegar

  • Salt, to taste

For the Cheese Mixture:

  • 8 oz feta cheese, crumbled

  • 4 oz cream cheese, softened

  • ½ cup sour cream

  • 1 garlic clove, minced

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon olive oil

  • Salt, to taste

For Garnish:

  • Chopped basil

  • Red pepper flakes

  • Freshly grated Parmesan cheese


Instructions

  1. Prepare the Bruschetta:
    In a bowl, mix diced Roma tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and a pinch of salt. Toss gently and let sit for 10 minutes to marinate.

  2. Make the Cheese Base:
    In a food processor, blend feta, cream cheese, sour cream, garlic, lemon juice, and olive oil for 3–4 minutes until smooth and creamy. Taste and adjust salt if needed.

  3. Assemble the Dip:
    Spread the cheese mixture evenly in a shallow serving dish. Top with the marinated bruschetta mixture.

  4. Garnish & Serve:
    Finish with extra basil, red pepper flakes, and Parmesan. Serve with toasted baguette slices or crackers.

Notes

For a thicker dip, remove tomato seeds before dicing.

Greek yogurt can replace sour cream for a lighter version.

Keep the bruschetta topping separate until serving if making ahead.
