Description

This Cabbage Fritters Recipe is an easy, budget-friendly way to turn simple veggies into crispy, golden patties. Made with shredded cabbage, carrots, eggs, and pantry spices, these fritters can be pan-fried or baked and are perfect for snacks, sides, or make-ahead breakfasts.

  • 16 oz shredded cabbage

  • 2 medium-small carrots, grated

  • 23 scallions or 1 regular onion, thinly sliced

  • 3 large eggs

  • 45 tablespoons flour (gluten-free or grain-free if needed)

  • 2 cloves garlic, minced

  • 1 teaspoon sea salt

  • ½ teaspoon ground black pepper

  • ½ teaspoon paprika or smoked paprika

  • ½ teaspoon ground coriander, optional

  • 34 tablespoons ghee or oil of choice for frying


Instructions

  1. Wash and prepare all vegetables. Shred the cabbage, grate the carrots, slice the scallions or onion, and mince the garlic.

  2. Add all ingredients to a large bowl and gently mix until everything is coated with egg. Avoid overmixing.

  3. Heat a non-stick skillet over medium-low heat and add oil or ghee.

  4. Form small balls of the cabbage mixture, place in the skillet, and gently flatten.

  5. Cook for about 3 minutes per side, until golden brown and crispy.

  6. Repeat with remaining mixture, adding more oil as needed. Serve warm or cold.

Notes

To bake: Preheat oven to 420°F. Place flattened fritters on a parchment-lined baking sheet and bake for 20–23 minutes, flipping halfway. Broil for 1 minute for extra crispiness.

Do not discard liquid that collects in the bowl—it helps bind the fritters.

Cheese such as feta, parmesan, or cheddar can be added for extra flavor.
