Description

  • 1 ½ lbs chicken breast or thighs

  • 2 cans white beans (cannellini or great northern), drained and rinsed

  • 4 cups chicken broth

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 jalapeño, diced (seeds removed for less heat)

  • 2 tbsp Cajun seasoning (adjust to taste)

  • 4 oz cream cheese, softened

  • ½ cup heavy cream

  • 1 tbsp lime juice

  • Fresh cilantro, chopped (for garnish)

  • Optional toppings: shredded cheese, extra jalapeños, lime wedges


Instructions

  1. Sear the Chicken – Season chicken with salt, pepper, and 1 tsp Cajun seasoning. In a Dutch oven or large pot, sear until golden on both sides. Remove, let cool slightly, then shred.

  2. Sauté the Veggies – In the same pot, add onion, garlic, bell peppers, and jalapeño. Cook until softened and fragrant, scraping up any browned bits.

  3. Simmer the Chili – Add chicken broth, white beans, and remaining Cajun seasoning. Return shredded chicken to the pot. Simmer for 20–30 minutes to allow flavors to meld.

  4. Make It Creamy – Stir in cream cheese and heavy cream until smooth and velvety. Add lime juice for brightness.

  5. Serve – Ladle into bowls, garnish with cilantro, and add toppings of your choice.
