Carrot Apple Salad is a creamy, refreshing side dish made with crisp red and green apples, matchstick carrots, sweet dried cranberries, and juicy mandarin oranges tossed in a vanilla yogurt and mayo dressing. This easy make-ahead salad is perfect for holidays, potlucks, and busy weeknights.
Ingredients
1 red delicious apple, cut into matchsticks
1 granny smith apple, cut into matchsticks
2 tablespoons lemon juice
2 cups matchstick carrots
1/4 cup yellow onion, finely diced
1/3 cup dried sweetened cranberries
1/2 cup vanilla yogurt
1/4 cup mayonnaise
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup canned mandarin segments, drained
Instructions
Cut both apples into matchstick-sized pieces and place them in a medium bowl.
Pour lemon juice over the apples and toss well to coat. Let sit for 5 minutes to prevent browning.
In a large mixing bowl, add the matchstick carrots, diced onion, and dried cranberries.
Add the lemon-coated apples to the bowl.
Stir in the vanilla yogurt and mayonnaise.
Add sugar, salt, and pepper. Mix until evenly combined.
Gently fold in the drained mandarin segments.
Cover and refrigerate for at least 3 hours before serving.
Stir gently before serving and enjoy.
Notes
Chill time is important for best flavor.
You can substitute plain or Greek yogurt for a tangier version.
Add chopped pecans or walnuts for extra crunch if desired.
