This Cheddar Bay Biscuit Seafood Pot Pie is pure comfort food—creamy shrimp, scallops, and crab in a rich sauce, topped with golden cheesy biscuits. Perfect for busy weeknights or cozy weekends.
Ingredients
1 lb frozen mixed seafood (shrimp, scallops, crab), thawed & patted dry
2 tbsp unsalted butter
1 cup carrots, chopped (fresh or frozen)
1 cup peas (fresh or frozen)
1 ½ cups heavy cream
1 tsp garlic powder
1 tsp dill weed (fresh or dried)
1 box Cheddar Bay Biscuit Mix (plus ingredients per package directions)
Optional: extra shredded cheddar cheese
Instructions
Preheat oven to 375°F (190°C).
Cook vegetables: Melt butter in a skillet over medium heat. Add carrots and peas, cooking until slightly softened.
Add seafood: Stir in shrimp, scallops, and crab. Cook for 3-4 minutes, until shrimp turn pink and scallops are opaque.
Make filling: Pour in heavy cream, then stir in garlic powder and dill. Simmer 5 minutes until slightly thickened.
Prepare biscuits: Mix Cheddar Bay Biscuit dough according to package instructions. Add extra cheddar if desired.
Assemble: Transfer seafood mixture into a baking dish. Drop biscuit dough in spoonfuls on top.
Bake: Cook 20-25 minutes, until biscuits are golden and filling is bubbling.
