Description

This Cheesy Italian Spinach Bake is a creamy, comforting dish packed with fresh spinach, three cheeses, and Italian flavors. Easy to make and perfect for family dinners, holidays, or cozy weeknights.

For the Bake:

  • 2 lbs fresh spinach

  • 1 onion, finely chopped

  • 34 garlic cloves, minced

  • 2 tbsp olive oil

  • 15 oz ricotta cheese

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 3 large eggs

  • 1 tsp Italian seasoning

  • ¼ tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

Optional Topping:

  • ½ cup breadcrumbs (for crunchy topping)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  2. In a skillet, heat olive oil over medium heat. Cook onion for 5 minutes until soft. Add garlic and sauté for 1 minute.

  3. Gradually add spinach in batches, allowing it to wilt before adding more. Drain excess liquid and let cool slightly.

  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and red pepper flakes. Whisk in eggs until smooth.

  5. Fold the cooled spinach mixture into the cheese mixture. Spread evenly in the prepared baking dish.

  6. Sprinkle breadcrumbs on top if desired.

  7. Bake for 25–30 minutes, or until bubbly and golden brown. For extra browning, broil for 1–2 minutes at the end.

  8. Rest for 5–10 minutes before slicing. Serve warm with salad and bread.

Notes

You can substitute frozen spinach—just thaw and squeeze out excess water.
Make ahead: Assemble earlier in the day, refrigerate, and bake when ready.
Swap cheeses like provolone or fontina for extra flavor.
