Creamy, cozy Cheesy Pinto Beans made with pantry staples and melted cheddar. This easy stovetop recipe is perfect for busy weeknights, meal prep, or a comforting side dish.
Ingredients
2 cloves garlic, minced
1 jalapeño, finely diced (optional)
1 tablespoon cooking oil
2 (15-ounce) cans pinto beans
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/8 teaspoon black pepper
2 dashes hot sauce
1/2 cup shredded cheddar cheese
Instructions
Mince the garlic and finely dice the jalapeño, removing seeds if desired.
Add the garlic, jalapeño, and oil to a saucepan over medium heat and sauté for about 1 minute until fragrant.
Add one can of pinto beans with its liquid to a blender and blend until smooth.
Add the puréed beans and the second can of drained beans to the saucepan and stir to combine.
Season with smoked paprika, cumin, black pepper, and hot sauce. Heat through, stirring occasionally.
Reduce heat to low, add the shredded cheddar cheese, and stir until melted and creamy.
Taste and adjust seasoning as needed. Serve warm.
Notes
For thinner beans, add a splash of water or broth.
Skip the jalapeño for a milder version.
Great served over rice, with tortillas, or as a burrito filling.
