Description

These Chicken Alfredo Lasagna Rolls are the perfect blend of creamy Alfredo sauce, tender chicken, and cheesy pasta baked to golden perfection. A cozy, family-friendly dinner that’s easy to make and endlessly comforting.

  • 12 lasagna noodles (whole wheat or gluten-free optional)

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)

  • 2 cups ricotta cheese (or cottage cheese for lighter option)

  • 1 cup grated Parmesan cheese

  • 2 cups shredded mozzarella cheese

  • 3 cups Alfredo sauce (store-bought or homemade)

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • Salt & pepper to taste

  • Fresh parsley, for garnish

Substitutions:

  • Vegetarian: Replace chicken with sautéed spinach or mushrooms.

  • Lightened-up: Use part-skim cheeses and light Alfredo sauce.


Instructions

  1. Prepare the Noodles – Boil a large pot of salted water. Cook lasagna noodles until al dente (8–10 min). Drain and lay flat on a towel to cool.

  2. Mix the Filling – In a bowl, combine chicken, ricotta, 1 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir until creamy.

  3. Assemble the Rolls – Spread a thin layer of Alfredo sauce in a 9×13-inch baking dish. Add ¼ cup filling to one end of each noodle, roll tightly, and place seam-side down in the dish.

  4. Top with Sauce & Cheese – Pour remaining Alfredo sauce over rolls. Sprinkle with remaining mozzarella cheese.

  5. Bake – Preheat oven to 375°F. Cover with foil, bake 25 minutes, then uncover and bake 15–20 minutes until bubbly and golden.

  6. Serve – Let rest for a few minutes. Garnish with parsley and enjoy.
