Ingredients

Scale

For the Chicken

  • 2 chicken breasts, sliced into thin cutlets

  • 1 egg

  • Splash of milk

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ cup breadcrumbs

  • ½ cup panko breadcrumbs

  • Vegetable oil, for frying

For the Garlic Butter

  • 4 tablespoons salted butter, slightly melted

  • 2 tablespoons mayonnaise

  • 23 cloves garlic, minced

  • 23 tablespoons fresh parsley, chopped

  • ¼ cup finely grated Parmesan cheese

For the Caesar Dressing

  • ½ cup mayonnaise

  • ¼ cup sour cream or Greek yogurt

  • ¼ cup finely grated Parmesan cheese

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon anchovy paste

  • 1 teaspoon Worcestershire sauce

  • 1 clove garlic, grated

  • Salt and pepper, to taste

For Assembly

  • 4 hoagie rolls or baguettes

  • 34 cups romaine lettuce, chopped or shredded

Instructions

  1. Slice chicken breasts horizontally into 4–6 thin cutlets.
  2. Whisk egg, milk, garlic powder, salt, and pepper in a bowl.
  3. Combine breadcrumbs and panko in a separate bowl.
  4. Dip chicken into egg mixture, then coat with breadcrumbs.
  5. Fry chicken in 1 inch of oil over medium-high heat until golden and crispy, about 4–5 minutes per side. Drain on paper towels.
  6. Mix all garlic butter ingredients in a small bowl.
  7. Slice rolls lengthwise and spread garlic butter on the inside. Toast in a 450°F oven or under the broiler for 3–4 minutes.
  8. Whisk all Caesar dressing ingredients until smooth.
  9. Toss romaine lettuce with 3–4 tablespoons of dressing.
  10. Assemble sandwiches with chicken cutlets, dressed lettuce, and extra Parmesan. Serve immediately.

Notes

For a lighter option, bake the breaded chicken at 425°F for 18–20 minutes.

Dressing and garlic butter can be made up to 2 days ahead.

Best enjoyed fresh while the chicken is crispy.
