Ingredients
3–4 boneless, skinless chicken breasts (thick-cut for stuffing)
2 ripe but firm pears, diced
½ cup crumbled Gorgonzola cheese
1 cup fresh spinach, chopped
2 cloves garlic, minced
2 tbsp olive oil (divided)
Salt and freshly ground black pepper, to taste
1 tbsp balsamic vinegar (optional, for drizzling)
Instructions
Preheat Oven: Set oven to 375°F (190°C).
Make Filling: In a medium bowl, combine diced pears, Gorgonzola, chopped spinach, garlic, salt, and pepper. Mix gently.
Stuff Chicken: Cut a pocket into each chicken breast and fill generously with the pear mixture. Secure with toothpicks if needed.
Sear: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown.
Bake: Transfer skillet to the oven and bake for 20–25 minutes, or until internal temperature reaches 165°F (75°C).
Finish & Serve: Let rest 5 minutes, then drizzle with balsamic vinegar if desired. Serve warm and enjoy!

Substitute Gorgonzola with goat cheese or blue cheese for a milder flavor.
