  • 34 boneless, skinless chicken breasts (thick-cut for stuffing)

  • 2 ripe but firm pears, diced

  • ½ cup crumbled Gorgonzola cheese

  • 1 cup fresh spinach, chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil (divided)

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp balsamic vinegar (optional, for drizzling)


Instructions

  1. Preheat Oven: Set oven to 375°F (190°C).

  2. Make Filling: In a medium bowl, combine diced pears, Gorgonzola, chopped spinach, garlic, salt, and pepper. Mix gently.

  3. Stuff Chicken: Cut a pocket into each chicken breast and fill generously with the pear mixture. Secure with toothpicks if needed.

  4. Sear: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown.

  5. Bake: Transfer skillet to the oven and bake for 20–25 minutes, or until internal temperature reaches 165°F (75°C).

  6. Finish & Serve: Let rest 5 minutes, then drizzle with balsamic vinegar if desired. Serve warm and enjoy!

Notes

Substitute Gorgonzola with goat cheese or blue cheese for a milder flavor.
To prep ahead: Stuff the chicken in the morning and refrigerate until ready to bake.
