Description
A warm and cozy Chicken Tortellini Soup made with tender chicken, cheese-filled tortellini, carrots, celery, onions, and herbs simmered in a flavorful broth. A comforting, hearty weeknight dinner that comes together quickly and satisfies everyone at the table.
Ingredients
1 lb chicken breasts or thighs, cut into bites
Salt & pepper
2 tbsp olive oil
1 diced onion
2 diced carrots
2 diced celery stalks
3 minced garlic cloves
8 cups chicken broth
2 bay leaves
1 tsp dried thyme
1 (9 oz) package cheese tortellini (fresh or frozen)
¼ cup fresh parsley, chopped
Instructions
Season the chicken pieces with salt and pepper.
Heat olive oil in a large soup pot over medium heat.
Add the onion, carrots, and celery. Sauté for 5 minutes until tender.
Stir in the garlic and cook one more minute.
Pour in the chicken broth. Add chicken, bay leaves, and thyme.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Add the tortellini and cook 5–7 minutes, or according to package directions.
Stir in fresh parsley and adjust seasonings.
Remove bay leaves and serve warm.
Notes
If the soup thickens as it sits, add extra broth before reheating.
For meal prep, cook tortellini separately and add only when serving.
Spinach, mushrooms, or peas make great add-ins for extra veggies.
Chicken thighs provide richer flavor, but breasts work perfectly too.
