Description

These soft and buttery Christmas Sugar Cookie Bars are the perfect festive dessert for busy holiday baking. Topped with creamy frosting and loaded with colorful sprinkles, they deliver all the charm of traditional Christmas cookies—without the extra work of rolling or cutting.

Ingredients

Scale

Sugar Cookie Bars

  • 1 cup softened butter (salted or unsalted)

  • 1 cup granulated sugar

  • ¼ cup brown sugar

  • 1 large egg (room temperature)

  • 2 tsp vanilla extract

  • ½ tsp almond extract (or peppermint extract)

  • 2 ½ cups all-purpose flour

  • 1 tbsp cornstarch

  • ½ tsp baking powder

  • ½ tsp salt

Frosting

  • ½ cup softened butter

  • 2 cups powdered sugar

  • 2 tsp vanilla extract

  • 23 tbsp heavy cream (cold)

  • Holiday sprinkles

Instructions

  1. Preheat your oven and line a baking pan with parchment paper.

  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add the egg, vanilla extract, and almond extract. Mix until smooth.

  4. Fold in the flour, cornstarch, baking powder, and salt until a soft dough forms.

  5. Press the dough evenly into the prepared pan.

  6. Bake until the edges are set but the center still looks slightly soft—this keeps the bars tender.

  7. Allow the bars to cool completely before frosting.

  8. To make the frosting, beat the butter and powdered sugar until fluffy.

  9. Add vanilla and cold heavy cream, whipping again until smooth and airy.

  10. Spread frosting over the cooled bars, top with festive sprinkles, chill to set, slice, and enjoy!

Notes

Don’t overbake—pull the bars out when they still look a little underdone for the softest texture.

Swap almond extract for peppermint extract to make them extra festive.

Chilling the frosted bars before slicing creates cleaner edges.

These bars stay soft for days when stored airtight.
