Description

This Cozy Autumn Wild Rice Soup is rich, hearty, and filled with fall vegetables, tender wild rice, and a creamy, comforting broth. Easy to make on the stovetop or in the Instant Pot, it’s the perfect cozy meal for chilly days.


Ingredients

  • 6 cups vegetable stock (or chicken stock)

  • 1 cup uncooked wild rice

  • 8 ounces baby bella mushrooms, sliced

  • 4 cloves garlic, minced

  • 2 medium carrots, diced

  • 2 ribs celery, diced

  • 1 large sweet potato, peeled and diced

  • 1 small white onion, diced

  • 1 bay leaf

  • 1 ½ tablespoons Old Bay seasoning

  • 1 (14-ounce) can unsweetened coconut milk

  • 2 large handfuls kale, stems removed and chopped

  • Fine sea salt, to taste

  • Freshly cracked black pepper, to taste


Instructions

Instant Pot Method

  1. Add vegetable stock, wild rice, mushrooms, garlic, carrots, celery, sweet potato, onion, bay leaf, and Old Bay seasoning to the Instant Pot. Stir to combine.

  2. Secure the lid and cook on Manual (High Pressure) for 25 minutes.

  3. Allow pressure to naturally release for 10 minutes, then carefully quick release remaining pressure. Remove bay leaf.

  4. Stir in coconut milk and kale. Season with salt and pepper to taste.

  5. Serve warm and enjoy.

Stovetop Method

  1. Heat 1 tablespoon olive oil or butter in a large pot over medium heat. Sauté onion for 5 minutes until softened. Add garlic and cook 1 minute.

  2. Add vegetable stock, wild rice, mushrooms, carrots, celery, sweet potato, bay leaf, and Old Bay seasoning.

  3. Bring to a simmer, reduce heat, cover, and cook 30–40 minutes until rice is tender.

  4. Stir in coconut milk and kale. Season with salt and pepper. Remove bay leaf and serve.

Notes

Cooking time may vary depending on the type of wild rice used.

Coconut milk keeps the soup dairy-free, but half-and-half or a homemade cream sauce can be substituted.

Soup will thicken as it cools; add extra broth when reheating if needed.
