  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 cup fresh cranberries

  • 2 tbsp honey

  • 2 tbsp orange juice

  • ¼ tsp ground cinnamon

  • ⅛ tsp ground ginger

  • ½ tsp salt

  • ¼ tsp black pepper

  • 4 oz brie cheese, sliced

  • ½ cup panko breadcrumbs

  • 2 tbsp melted butter

  • 1 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Heat olive oil in a saucepan over medium heat. Add cranberries and cook until they begin to burst, about 5 minutes.

  3. Stir in honey, orange juice, cinnamon, ginger, salt, and black pepper. Cook 3–4 more minutes until slightly thickened, then remove from heat and let cool.

  4. Slice a pocket into each chicken breast, being careful not to cut through.

  5. Stuff each chicken breast with brie slices and a spoonful of the cranberry mixture. Secure with toothpicks.

  6. In an oven-safe skillet, heat a little olive oil over medium-high heat. Sear each chicken breast 2–3 minutes per side until golden.

  7. Combine panko breadcrumbs with melted butter and sprinkle over the chicken.

  8. Transfer skillet to oven and bake for 20–25 minutes, or until chicken reaches 165°F (74°C).

  9. Let rest for 5 minutes before serving. Garnish with chopped parsley.

Notes

Don’t overstuff the chicken; a little filling goes a long way.

You can prepare the cranberry sauce up to a day ahead.

Brie substitutes: camembert or cream cheese.

Pairs beautifully with roasted vegetables or creamy scalloped potatoes.
