Ingredients
1 tbsp olive oil
1 lb boneless, skinless chicken breasts, cut into cubes
Salt and pepper, to taste
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 cup frozen peas
3 tbsp all-purpose flour
1 cup chicken broth
1 cup milk
1 cup orzo pasta
1 tsp dried thyme
1/2 tsp dried rosemary
Fresh parsley, for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until browned on all sides, about 5–6 minutes. Remove chicken and set aside.
In the same pan, add diced onion and minced garlic. Sauté for 3 minutes until fragrant and translucent.
Stir in diced carrots and celery, cooking for 5 minutes until softened.
Return the chicken to the skillet, then add the frozen peas. Sprinkle flour over the mixture and stir well.
Gradually pour in chicken broth and milk, stirring continuously to avoid lumps. Bring to a simmer and cook until the sauce thickens.
Add orzo pasta, dried thyme, and rosemary. Simmer for 8–10 minutes, stirring occasionally, until orzo is tender and sauce is creamy.
Serve in bowls and garnish with fresh parsley.
Notes
You can substitute heavy cream for milk for a richer sauce.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
If you prefer a thicker sauce, you can add more flour or reduce the liquid.
