Ingredients
2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
4 cups chicken broth
2 cups water
3 packs ramen noodles, seasoning packets discarded
1 cup heavy cream
1 tablespoon soy sauce
1 teaspoon red pepper flakes, optional
1 tablespoon cornstarch mixed with 2 tablespoons water
Vegetables of choice: spinach, bok choy, or bell peppers
2 green onions, sliced (for garnish)
Fresh cilantro, optional (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper and cook 5–7 minutes per side until golden and cooked through. Remove and rest.
In the same pot, sauté garlic and ginger for 1–2 minutes until fragrant.
Add chicken broth and water. Bring to a gentle simmer.
Add ramen noodles and cook 4–5 minutes, stirring occasionally.
Stir in heavy cream, soy sauce, and red pepper flakes if using.
Add cornstarch slurry and stir until the broth thickens slightly.
Add vegetables and cook just until tender.
Slice the rested chicken and add to bowls.
Ladle ramen into bowls and garnish with green onions and cilantro.
Serve hot.
Notes
Add a soft-boiled egg for extra richness.
Thin the broth with extra broth or water if needed.
Store leftovers up to 3 days; add liquid when reheating.
