Description

Creamy Garlic Shrimp Over Mashed Potatoes is a cozy comfort food dinner with juicy shrimp, fluffy potatoes, and a rich garlic cream sauce—all ready in under 40 minutes.

Ingredients

Scale

For the Shrimp

  • 1 lb large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • Salt and pepper, to taste

For the Creamy Garlic Sauce

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 teaspoon Dijon mustard (optional)

  • Salt and pepper, to taste

  • Fresh thyme leaves, for garnish

For the Mashed Potatoes

  • 2 lbs potatoes, peeled and cubed

  • ½ cup warm milk

  • ¼ cup butter

  • Salt, to taste

Instructions

  1. Make the Mashed Potatoes: Boil potatoes in salted water until fork-tender (about 15 minutes). Drain, then mash with warm milk and butter until smooth. Season with salt and keep warm.

  2. Cook the Shrimp: Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Sear in a hot skillet for 2–3 minutes per side until pink. Remove and set aside.

  3. Make the Creamy Garlic Sauce: In the same skillet, melt butter and sauté garlic until fragrant. Stir in heavy cream, Parmesan, and Dijon (if using). Simmer 3–5 minutes until slightly thickened.

  4. Assemble: Spoon mashed potatoes onto plates, top with shrimp, and drizzle sauce over the top. Garnish with thyme and serve hot.

Notes

Don’t overcook shrimp—they turn rubbery fast!
Warm milk makes mashed potatoes extra fluffy.
