Ingredients

  • 2 cloves garlic, minced

  • 1 can (15 oz) diced tomatoes (with juices)

  • 4 cups chicken broth

  • 1 package (16 oz) gnocchi

  • 1 cup heavy cream

  • Salt and pepper, to taste

  • Optional: spinach or basil for garnish


Instructions

  1. Brown the sausage: In a large soup pot or Dutch oven over medium heat, cook sausage until browned and cooked through (6–8 minutes), breaking into crumbles. Drain excess fat if needed.

  2. Add garlic + tomatoes: Stir in garlic and cook 30 seconds until fragrant. Add diced tomatoes and chicken broth. Stir and bring to a gentle boil.

  3. Cook gnocchi: Add gnocchi and cook 3–4 minutes, or until they float to the top.

  4. Make it creamy: Reduce heat to low. Stir in heavy cream and simmer 5 minutes, gently stirring, until slightly thickened.

  5. Season + serve: Taste and season with salt and pepper. Stir in spinach or basil (if using) just before serving. Ladle into bowls and enjoy warm.

Notes

Spice level: Mild sausage keeps it family-friendly; spicy gives it a little kick.

Thicker soup: Simmer 2–3 extra minutes after adding cream.

Greens tip: Add spinach at the very end so it stays bright and tender.
