- 2 medium carrots (diced)
- 2 celery stalks (diced)
- 2 cups baby spinach (washed and trimmed)
- 1 cup crushed tomatoes (optional)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional, for spice)
- Salt and pepper to taste
Instructions
- Brown the Sausage
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned and fully cooked. Remove and set aside.
- Sauté Vegetables
- In the same pot, sauté onions, carrots, and celery until soft (about 5–7 minutes). Add garlic and cook for 30 seconds until fragrant.
- Add Broth and Simmer
- Pour in the chicken broth and add crushed tomatoes (if using). Bring to a boil, then reduce heat to simmer for 20 minutes.
- Incorporate Cream and Cheese
- Stir in heavy cream and Parmesan cheese. Mix well until cheese is melted and soup is creamy.
- Add Spinach and Seasonings
- Toss in baby spinach and stir until wilted. Adjust seasoning with salt, pepper, and red pepper flakes.
