This Creamy Sausage Tortellini Soup is the ultimate cozy comfort food. Loaded with Italian sausage, cheesy tortellini, spinach, and a silky cream broth, it’s the perfect autumn soup for family dinners or meal prep.
Ingredients
12 oz spicy Italian sausage (or mild if preferred)
1 tablespoon olive oil
1 tablespoon Italian seasoning
1 teaspoon paprika (regular or smoked)
1 large sweet potato (or 2 small), peeled and cubed
5 cloves garlic, minced
¼ teaspoon red pepper flakes
1 tablespoon tomato paste
6 cups water
8 oz refrigerated three-cheese tortellini (such as Buitoni)
4 oz fresh spinach
½ cup heavy cream
4 tablespoons fresh thyme
Salt and extra red pepper flakes, to taste
Instructions
Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned. Drain grease, then season with Italian seasoning and paprika.
Add cubed sweet potato, garlic, red pepper flakes, and tomato paste. Stir to coat.
Pour in 6 cups of water, stir well to dissolve tomato paste, and bring to a boil. Lower heat to a simmer, cover, and cook 15 minutes, or until sweet potatoes are tender.
Stir in tortellini, cover, and cook for 10 minutes or according to package instructions.
Add spinach and stir until wilted. Remove pot from heat and slowly mix in heavy cream.
Season with salt or more red pepper flakes if needed. Top with fresh thyme before serving.
Notes
If the soup thickens too much, add a splash of water or cream when reheating.
For extra spice, use hot Italian sausage or increase red pepper flakes.
Swap sweet potato for regular potatoes, carrots, or butternut squash.
To freeze: make without tortellini, then add fresh tortellini when reheating.
