Ingredients
2 cans butter beans, drained and rinsed (or 3 cups cooked butter beans)
½ cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 small onion, diced
1 cup heavy cream (or coconut cream for vegan option)
1 cup chicken or vegetable broth
½ cup Parmesan cheese, grated (or nutritional yeast for vegan option)
2 tbsp olive oil
Fresh basil, chopped, for garnish
Optional: 2 cups spinach or ½ tsp red pepper flakes
Instructions
Heat olive oil in a large skillet over medium heat. Add garlic and onion, sauté for 2–3 minutes until fragrant and translucent.
Stir in sun-dried tomatoes and cook for 1–2 minutes to release their flavor.
Pour in the broth and bring to a gentle simmer. Reduce heat and stir in the heavy cream.
Add butter beans and gently stir to coat in the sauce. Simmer for 5–7 minutes to let flavors absorb.
Stir in Parmesan cheese to thicken the sauce. Add more broth if it’s too thick.
Sprinkle with fresh basil before serving. Serve with crusty bread, rice, or pasta.
Notes
For a vegan version, use coconut cream and nutritional yeast.
Add spinach at the end for extra greens.
Spice lovers can add red pepper flakes or cayenne for heat.
