Ingredients
For the Cookies
1 cup unsalted butter, softened
1 cup granulated sugar
1 tablespoon vanilla extract
1 large egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
For the Brûlée Topping
1/2 cup heavy cream
1/4 cup brown sugar
1 tablespoon cornstarch
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Beat butter and granulated sugar until light and fluffy.
Mix in vanilla extract and egg until fully combined.
In a separate bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add dry ingredients to wet ingredients until dough forms.
Roll dough into 1-inch balls and place 2 inches apart on baking sheet.
Flatten each ball slightly into thick disks.
Bake for 10–12 minutes until edges are lightly golden.
Cool cookies completely on a wire rack.
Heat heavy cream in a saucepan until gently simmering.
Whisk brown sugar and cornstarch together, then add to cream.
Cook 2–3 minutes until slightly thickened; cool briefly.
Spoon topping onto cooled cookies.
Broil 1–2 minutes until caramelized.
Let topping set before serving.
Notes
Watch closely while broiling—the sugar caramelizes quickly.
Cookies must be fully cooled before adding topping.
For best texture, brûlée just before serving.
