Description

This Crispy Gnocchi With Spinach And Feta is your ultimate 20-minute comfort meal! Golden pan-fried gnocchi, tender spinach, and tangy feta come together in a one-pan wonder that’s quick, cozy, and full of flavor. Perfect for busy weeknights when you crave something homemade without the hassle.

Ingredients

Scale
  • 1 pound gnocchi

  • 2 tablespoons olive oil

  • 4 cups fresh spinach (about 120 g)

  • 4 ounces feta cheese, crumbled (about 115 g)

  • 2 cloves garlic, minced

  • Salt, to taste

  • Black pepper, to taste

  • 1 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions until they float to the top, about 2–3 minutes. Remove with a slotted spoon and drain.

  2. Heat olive oil in a large skillet over medium-high heat. Add the gnocchi in a single layer and cook undisturbed for 2–3 minutes, until golden and crispy.

  3. Gently stir and cook another 2–3 minutes to crisp all sides.

  4. Lower the heat to medium and add minced garlic. Sauté for 1 minute until fragrant.

  5. Add the spinach and cook for 2–3 minutes until wilted.

  6. Season with salt, black pepper, and red pepper flakes if using.

  7. Remove from heat and stir in crumbled feta. Serve immediately and enjoy!

Notes

Skip the boiling step if using shelf-stable gnocchi — pan-fry directly for extra crispiness.
Add a splash of cream before stirring in feta for a creamier version.
Great served with a side of garlic bread or a fresh salad.
Store leftovers in the fridge for up to 3 days and reheat in a skillet for best results.
