Description

Ingredients

  • 2 packages (1 ounce each) dry onion soup mix

  • 1/2 teaspoon paprika

  • 2 pounds beef stew meat or boneless beef roast, cut into 1-inch pieces

  • 5 medium potatoes, peeled and diced

  • 2 to 3 cups baby carrots

  • 1 small yellow onion, chopped

  • 2 cans (10 ounces each) cream of celery soup

  • 1 cup ketchup or tomato sauce


Instructions

  1. In a large plastic bag, combine the dry onion soup mix and paprika.

  2. Add the beef, seal the bag, and shake until the meat is evenly coated.

  3. Lightly grease a 7-quart crock pot and spread the seasoned beef evenly on the bottom.

  4. Layer the potatoes, carrots, and chopped onion over the beef.

  5. In a small bowl, mix the cream of celery soup and ketchup until smooth.

  6. Pour the sauce evenly over the meat and vegetables.

  7. Cover and cook on low for 7 to 8 hours, until the beef is tender and vegetables are soft.

  8. Stir gently before serving.

Notes

Tomato sauce can be used instead of ketchup for a less sweet flavor.

If the stew is too thick, add a small splash of water or beef broth before serving.
