This Crock Pot Beef Stew is a cozy, set-it-and-forget-it dinner made with tender beef, potatoes, carrots, and a rich, savory sauce. Perfect for busy days when you want real comfort food without extra work.
Ingredients
2 packages (1 ounce each) dry onion soup mix
1/2 teaspoon paprika
2 pounds beef stew meat or boneless beef roast, cut into 1-inch pieces
5 medium potatoes, peeled and diced
2 to 3 cups baby carrots
1 small yellow onion, chopped
2 cans (10 ounces each) cream of celery soup
1 cup ketchup or tomato sauce
Instructions
In a large plastic bag, combine the dry onion soup mix and paprika.
Add the beef, seal the bag, and shake until the meat is evenly coated.
Lightly grease a 7-quart crock pot and spread the seasoned beef evenly on the bottom.
Layer the potatoes, carrots, and chopped onion over the beef.
In a small bowl, mix the cream of celery soup and ketchup until smooth.
Pour the sauce evenly over the meat and vegetables.
Cover and cook on low for 7 to 8 hours, until the beef is tender and vegetables are soft.
Stir gently before serving.
Notes
Tomato sauce can be used instead of ketchup for a less sweet flavor.
If the stew is too thick, add a small splash of water or beef broth before serving.
This stew tastes even better the next day and reheats beautifully.
