Description

This Crock Pot Beef Stew is a hearty, comforting classic loaded with tender chunks of beef, carrots, potatoes, and a rich, savory broth. It’s the perfect set-it-and-forget-it meal for busy weeknights, chilly evenings, or whenever you need a little cozy in your bowl.

For the Stew:

  • 2 lbs beef stew meat, cut into 1-inch cubes

  • 4 medium carrots, peeled and sliced

  • 3 medium potatoes, peeled and diced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 cups beef broth

  • 1 cup frozen peas

  • 1/3 cup all-purpose flour

  • 2 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • Salt and pepper, to taste

  • 2 tbsp olive oil

For Garnish:

  • Fresh parsley, chopped


Instructions

  1. Prep the Beef: Place beef cubes in a large bowl. Sprinkle with flour, season with salt and pepper, and toss to coat.

  2. Brown the Meat: Heat olive oil in a skillet over medium-high heat. Brown beef in batches (about 5 minutes per batch), then transfer to the crock pot.

  3. Add the Vegetables: Add carrots, potatoes, onion, and garlic to the crock pot with the browned beef.

  4. Stir in Broth & Seasonings: Pour in beef broth, then stir in tomato paste, thyme, rosemary, and bay leaf. Mix well.

  5. Slow Cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender and vegetables are soft.

  6. Add Peas: About 30 minutes before serving, stir in frozen peas. Remove bay leaf before serving.

  7. Serve: Ladle into bowls, garnish with chopped parsley, and serve with crusty bread.

Notes

  • For a thicker stew, mash a few of the cooked potatoes before serving.

  • You can prep the night before and refrigerate everything until morning—just dump and go.

  • Chuck roast works great if you don’t have pre-cut stew meat.

  • Leftovers keep well for up to 4 days and taste even better the next day!
