  • 4 boneless, skinless chicken breasts (frozen works; add 30 minutes to cook time)

  • 1 box (6 oz) stuffing mix (Stove Top or store brand)

  • 1 can (10.5 oz) cream of chicken soup

  • 2/3 cup milk (or water)

  • 1 cup chicken broth

  • 1/2 cup sour cream (or Greek yogurt)

  • 1/2 cup frozen peas or mixed vegetables (optional)

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp dried thyme


Instructions

  1. Spray the slow cooker with nonstick cooking spray.

  2. Place chicken breasts in the bottom of the Crock Pot.

  3. In a medium bowl, whisk together cream of chicken soup, milk, chicken broth, and sour cream until smooth.

  4. Pour the mixture evenly over the chicken.

  5. Sprinkle stuffing mix evenly on top. Gently press down with a fork.

  6. Add frozen peas or vegetables if using. Sprinkle with black pepper, garlic powder, and thyme.

  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken reaches 165°F and stuffing is fluffy.

  8. Fluff stuffing before serving. For a crispy top, broil for 2–3 minutes if desired.

  9. Serve hot and enjoy!

Notes

Frozen chicken is safe to use; simply increase cooking time by 30 minutes.

For extra creaminess, use whole milk instead of water.

Want crispy stuffing? Broil for a few minutes before serving.
