This cozy Crock Pot chicken Ramen is packed with tender shredded chicken, savory broth, colorful veggies, and those beloved curly noodles that soak up every bit of flavor. An easy, comforting slow cooker recipe perfect for busy weeknights or laid-back weekends.
Ingredients
1 ½ lbs boneless chicken thighs
3 garlic cloves, minced
1 cup matchstick carrots
1 red or green bell pepper, sliced
1 cup sugar snap peas
3 scallions, sliced
4 cups chicken broth
¼ cup soy sauce
1 tablespoon brown sugar
2 packages ramen noodles (use 1 seasoning packet)
Instructions
Add chicken thighs, minced garlic, carrots, bell pepper, sugar snap peas, and scallions to the slow cooker.
Pour in the chicken broth and soy sauce, then sprinkle in the brown sugar and one ramen seasoning packet.
Stir well, cover, and cook on High for 4 hours or Low for 6 hours.
Once the chicken is tender, break the ramen noodles into the slow cooker and submerge them in the broth.
Cover and cook for 20–30 minutes, stirring every 10 minutes until the noodles are soft.
Shred chicken if desired, stir everything together, and serve warm.
Notes
For firmer noodles, add them during the last 15–20 minutes of cooking.
Chicken breasts can replace thighs but may be slightly less tender.
Add chili flakes or sriracha if you want a little heat.
Leftovers thicken as noodles absorb broth — add extra broth when reheating.
