  • ½ cup flour

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Pinch salt

  • ½ tsp black pepper

  • 4 tbsp butter, divided

  • 3 yellow onions, sliced (about 23 cups)

  • ¾ cup beef stock (low sodium preferred)

  • 1 packet French onion soup & dip mix

  • 1 bay leaf

  • ½ tsp dried rosemary

  • 4 oz cream cheese, cut into cubes

  • ¼ cup sour cream

  • 1 (12 oz) bag egg noodles

  • French fried onions (optional, for topping)


Instructions

  1. Coat the Beef: Add the beef, flour, garlic powder, onion powder, salt, and pepper to a zip-top bag. Shake until coated.

  2. Sear the Beef: Heat 2 tbsp butter in a skillet over medium-high heat. Sear the beef for 2–3 minutes per side until browned. Transfer to the slow cooker.

  3. Cook the Onions: Reduce heat to medium-low. Melt remaining 2 tbsp butter and sauté the sliced onions for 5 minutes until softened.

  4. Slow Cook: Add the onions to the slow cooker along with beef stock, French onion soup mix, bay leaf, and rosemary. Stir. Cook on LOW for 8 hours.

  5. Finish the Sauce: Remove bay leaf. Stir in the cream cheese and sour cream until smooth and creamy.

  6. Cook the Noodles: Boil egg noodles according to package directions. Drain and set aside.

  7. Serve: Spoon the creamy beef mixture over the noodles. Top with French fried onions if desired.

Notes

Browning the beef adds deeper flavor — try not to skip this step.

For a thicker sauce, add 1 tbsp flour while sautéing the onions.

For extra onion flavor, use 4 onions instead of 3.

Store leftovers in the fridge for 3–4 days; the sauce reheats beautifully.
