Description

These Crock Pot French Onion Meatballs combine the savory richness of French onion soup with tender, juicy meatballs and melty cheese—all in your slow cooker. Perfect over mashed potatoes, rice, or noodles for an effortless, cozy dinner.

Ingredients

Scale
  • 2 lbs frozen meatballs (beef, chicken, or pork – plain, not flavored)

  • 2 large yellow onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup sliced mushrooms (optional)

  • 3 cups low-sodium beef broth

  • 1 packet (0.87 oz) brown gravy mix

  • 1 tsp dried thyme (or Italian seasoning, oregano, or basil)

  • 1 tbsp white wine vinegar (or red wine vinegar / apple cider vinegar)

  • 2 tbsp cornstarch

  • 2 tbsp water (for cornstarch slurry)

  • 1½ cups shredded Gruyere cheese (or provolone, mozzarella, or fontina)

  • Fresh parsley, chopped (for garnish)

  • Black pepper, to taste

Instructions

  1. Layer the base: Place sliced onions in the bottom of a 6-quart crock pot. Add mushrooms if using. Top with frozen meatballs.

  2. Mix the magic: In a medium bowl, whisk together beef broth, brown gravy mix, garlic, black pepper, dried thyme, and white wine vinegar until smooth. Pour over meatballs.

  3. Slow cook: Cover and cook on high for 2½–3½ hours or low for 5–6 hours, until meatballs are heated through and onions are tender.

  4. Thicken the sauce: In a small bowl, mix cornstarch with water to create a slurry. Pour into the crock pot, stir gently, and cook for another 5–10 minutes until thickened.

  5. Add cheese: Sprinkle shredded Gruyere evenly over the meatballs, cover, and cook for about 10 minutes until melted.

  6. Serve & enjoy: Garnish with fresh parsley and serve over mashed potatoes, rice, or noodles.

Notes

For extra onion flavor, add an additional onion.
Homemade meatballs can be used—just brown them first to hold shape.
Great for meal prep—leftovers reheat well in the microwave or on the stovetop.
Serve with a crusty baguette to soak up the extra gravy.
