Ingredients
1 pound ground beef
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
2 medium potatoes, diced
3 cloves garlic, minced
4 cups beef broth
1 can (14.5 oz) diced tomatoes
2 tablespoons Worcestershire sauce
1 teaspoon Italian seasoning
Salt, to taste
Pepper, to taste
1 cup frozen corn
1 cup frozen green beans
2 cups cooked pasta (added at the end; optional)
Instructions
Chop the onion, carrots, celery, potatoes, and garlic into small, even pieces.
In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Add the cooked beef to the crock pot along with the chopped vegetables, diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, pepper, corn, and green beans.
Stir everything together to distribute flavors evenly.
Cover and cook on Low for 6–8 hours or High for 3–4 hours.
About 30 minutes before serving, cook the pasta separately until al dente.
Add the cooked pasta to the soup and stir gently.
Ladle into bowls and serve warm. Garnish with grated cheese or herbs if desired.
Notes
Cook pasta separately to prevent it from becoming mushy.
Add extra broth if you prefer a thinner soup.
Feel free to swap ground beef with turkey, chicken, or plant-based meat.
