Cozy, hearty, and loaded with cheesy goodness, this Crock pot Lasagna Soup transforms classic lasagna flavors into an easy, comforting slow cooker meal perfect for busy nights.
Ingredients
1 lb ground beef (or ground turkey)
1 onion, diced
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes
1 can (28 oz) crushed tomatoes (or marinara/tomato sauce combo)
3 cloves garlic, minced
1 tablespoon Italian seasoning
4 cups beef broth
8–10 lasagna noodles, broken into pieces
Ricotta cheese, for topping
Shredded mozzarella cheese, for topping
Grated Parmesan cheese, for topping
Fresh basil, optional for garnish
Instructions
Brown the ground beef over medium-high heat in a skillet, seasoning with salt and pepper. Drain excess fat.
Transfer browned beef to a 6-quart crock pot.
Add diced onion, diced red bell pepper, crushed tomatoes, diced tomatoes, minced garlic, and Italian seasoning.
Pour in beef broth and stir everything together.
Cover and cook on LOW for 5-6 hours.
Remove the lid, break lasagna noodles into bite-size pieces, and stir into the soup.
Cover and cook on HIGH for about 30 minutes until noodles are tender.
Spoon into bowls. Top each serving with a dollop of ricotta cheese, shredded mozzarella, grated Parmesan, and fresh basil if desired. Enjoy!
