Creamy, comforting, and unbelievably easy, this Crock Pot No Peek Chicken with Rice is a true set-it-and-forget-it dinner. Tender chicken cooks slowly over fluffy rice in a rich onion gravy, making it perfect for busy weeknights or cozy family meals.
Ingredients
2 cups white Jasmine rice
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1¼ cups chicken stock
3 teaspoons minced garlic
½ teaspoon black pepper
1½ lbs boneless, skinless chicken breasts
1 packet Lipton® onion soup mix
2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
Lightly grease the inside of a slow cooker.
Add the rice, cream of chicken soup, cream of mushroom soup, chicken stock, minced garlic, and black pepper to the bottom of the crock pot. Stir until well combined and evenly coated.
Place the chicken breasts on top of the rice mixture.
Sprinkle the onion soup mix evenly over the chicken.
Cover with the lid and cook without opening on HIGH for 3½ hours or LOW for 5–6 hours.
Once the chicken is fully cooked and tender, leave it whole or shred it directly in the slow cooker.
Garnish with fresh parsley before serving, if desired.
Notes
Do not lift the lid while cooking—this allows steam to escape and can affect how the rice cooks.
Jasmine rice works best; other rice varieties may require different liquid ratios.
For a creamier texture, gently stir everything together before serving.
Leftovers reheat well with a splash of chicken stock.
