Creamy, cheesy, and full of flavor, this Crock Pot Pepper Jack Chicken is a comforting slow cooker meal packed with tender chicken, veggies, and melted Pepper Jack cheese. Perfect for busy weeknights!
Ingredients

3.5 lbs boneless, skinless chicken thighs or breasts

1 teaspoon onion powder

1 teaspoon garlic powder

2 teaspoons cumin

Salt and pepper to taste

10 oz frozen whole green beans

1 bell pepper, seeded and sliced

8 oz fresh mushrooms, sliced

1/4 cup butter

10 slices Pepper Jack cheese
Instructions

Place chicken in the bottom of a 6-quart slow cooker. Season with garlic powder, onion powder, cumin, salt, and pepper.

Layer frozen green beans, mushrooms, and bell pepper on top. Season again lightly with salt and pepper.

Add butter on top. Cover and cook on low for 4-6 hours until the chicken is tender and easy to shred.

Stir the chicken to shred it in the slow cooker.

Top with Pepper Jack cheese slices, cover, and cook on high until the cheese melts.

Serve as is or over rice, potatoes, or in tortillas for a cheesy chicken taco night!
Notes
For extra spice, add jalapeño slices or a pinch of cayenne.
Chicken breasts can be used instead of thighs—both shred well.
If the sauce is too thin, leave uncovered for 10 minutes to thicken slightly.
