Description
Creamy, sweet, and just a little spicy, this Crock pot Sweet Chili Chicken is an easy slow cooker dinner made with tender shredded chicken, sweet chili sauce, ranch seasoning, and cream cheese. Perfect over rice for busy weeknights.
Ingredients
2 lbs boneless, skinless chicken breasts
1 oz ranch dressing mix
20.75 oz sweet chili sauce (about 2½ cups)
8 oz cream cheese (full-fat recommended)
Sliced green onions, for garnish
Instructions
Add the chicken breasts to the bottom of the slow cooker.
Sprinkle the ranch dressing mix evenly over the chicken.
Pour the sweet chili sauce on top.
Place the block of cream cheese over the chicken and sauce.
Cook on LOW for 4½ hours or HIGH for 3½ hours, until the chicken is tender.
Shred the chicken using two forks and stir until the cream cheese is fully melted and the sauce is smooth.
Serve warm over rice and garnish with sliced green onions.
Notes
Serve with steamed broccoli, green beans, or a simple salad for a complete meal.
Sauce thickens as it cools—add a splash of broth if needed when reheating.
