  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 cups mushrooms, sliced

  • 2 cups beef broth

  • 1 cup sour cream

  • 1/4 cup flour

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon paprika

  • Salt and pepper, to taste

  • Fresh parsley, for garnish


Instructions

  1. Place beef stew meat in the crockpot and season with salt, pepper, and paprika.

  2. Add the chopped onion, minced garlic, and sliced mushrooms.

  3. In a small bowl, whisk together beef broth, Worcestershire sauce, and flour until smooth. Pour over the beef and vegetables.

  4. Cover and cook on low for 7–8 hours or high for 4–5 hours, until the beef is tender.

  5. Stir in sour cream just before serving for a rich, creamy finish.

  6. Garnish with fresh parsley and serve over egg noodles or rice.

Notes

For a lighter version, swap sour cream with plain Greek yogurt.
Want thicker sauce? Remove the lid for the last 30 minutes of cooking.
This dish freezes well — just skip adding sour cream until reheating.
