  • 1 lb Italian sausage (mild or spicy)

  • 1 (19 oz) package frozen cheese tortellini

  • 4 cups fresh spinach, chopped

  • 1 (28 oz) can diced tomatoes (undrained)

  • 1 (8 oz) block cream cheese, cubed

  • 4 cups chicken broth (low-sodium recommended)

  • 1 teaspoon minced garlic

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • Fresh Parmesan (optional, for serving)


Instructions

  1. Cook the Sausage: In a skillet, brown Italian sausage over medium heat for 5–7 minutes, breaking it apart as it cooks. Drain fat.

  2. Build the Base: Add sausage, diced tomatoes (with juice), garlic, Italian seasoning, and chicken broth to the slow cooker. Stir well.

  3. Add Cream Cheese: Scatter cubed cream cheese on top. Cover and cook on Low for 4–5 hours or High for 2–3 hours.

  4. Finish with Tortellini & Spinach: Stir in frozen tortellini and spinach about 30 minutes before serving. Cook until pasta is tender and spinach is wilted.

  5. Season & Serve: Taste, adjust salt and pepper, then serve hot with Parmesan and crusty bread.

Notes

For extra spice, use hot Italian sausage or add red pepper flakes.
If reheating leftovers, add a splash of chicken broth to keep it creamy.
Frozen spinach works if fresh isn’t available.
