This Crockpot Cheesy Chicken Broccoli Rice is the ultimate comfort meal—creamy, cozy, and perfect for busy weeknights. Tender chicken, fluffy rice, melty cheddar, and fresh broccoli all cook together in one pot for an easy, family-friendly dinner that practically makes itself.
Ingredients
2 cups uncooked long-grain white rice
4 boneless, skinless chicken breasts
2 cups fresh broccoli florets (or frozen, thawed)
1 can (10.5 oz) condensed cream of chicken soup
2 cups shredded sharp cheddar cheese, divided
1 1/2 cups chicken broth
1/2 cup milk
2 cloves garlic, minced
1 teaspoon onion powder
1/2 teaspoon black pepper
Salt to taste
Optional: extra cheddar cheese or chopped parsley for garnish
Instructions
Lightly spray the inside of your crockpot with non-stick cooking spray.
Spread the uncooked rice evenly across the bottom of the crockpot.
Place the chicken breasts on top of the rice.
Season with garlic, onion powder, pepper, and salt.
In a medium bowl, whisk together the cream of chicken soup, chicken broth, and milk until smooth.
Pour the mixture evenly over the chicken and rice.
Cover and cook on LOW for 4–5 hours or HIGH for 2–2.5 hours.
Remove chicken, shred it, and return it to the crockpot.
Stir in the broccoli and 1 1/2 cups shredded cheddar.
Cover and cook for another 20–30 minutes, until the broccoli is tender and the cheese is melted.
Taste and adjust seasonings. Serve warm with extra cheddar or parsley if desired.
Notes
Frozen broccoli should be thawed and drained before adding to avoid excess moisture.
Brown rice works but requires additional cook time.
For extra creaminess, add 2–3 tablespoons of cream cheese in step 9.
Rotisserie chicken may be used—add it shredded during step 8.
