  • 3 boneless, skinless chicken breasts (2 pounds)

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • ½ teaspoon dried Italian seasoning

  • 1 can (14.5 oz) green beans, drained

  • 1 box (6 oz) chicken stuffing mix

  • 1 can (10.5 oz) low-sodium cream of chicken soup

  • 1¼ cups low-sodium chicken broth, divided

  • ¼ cup sour cream

  • ¼ cup melted butter


Instructions

  1. Coat a 6-quart slow cooker with nonstick spray. Place chicken breasts in a single layer.

  2. In a small bowl, mix salt, pepper, garlic powder, and Italian seasoning. Sprinkle over both sides of the chicken.

  3. Add drained green beans on top of the seasoned chicken.

  4. Sprinkle the dry stuffing mix evenly over the green beans.

  5. In a separate bowl, whisk together the cream of chicken soup, 1 cup chicken broth, sour cream, and melted butter.

  6. Pour the mixture over the stuffing. Do not stir.

  7. Cover and cook:

    • HIGH for 4–5 hours

    • LOW for 6–7 hours
      or until chicken reaches 165°F.

  8. Fluff the stuffing with a fork. Add the remaining ¼ cup broth if the mixture looks dry.

  9. Serve warm and enjoy!

Notes

If your slow cooker runs hot, check the chicken early to prevent drying.

Add peas, carrots, or corn in the last 30 minutes if you’d like extra veggies.
