These Crockpot Fajitas are a flavorful, no-fuss meal perfect for busy weeknights. Juicy shredded chicken, tender bell peppers, and bold fajita seasoning cook low and slow for maximum comfort with minimal effort.
Ingredients
1 lb chicken (boneless, skinless breasts or thighs)
2 bell peppers, sliced (any colors you like)
1 onion, sliced
1 packet fajita seasoning
Tortillas, for serving
Optional toppings:Sour cream
Shredded cheese
Guacamole
Lime wedges
Fresh cilantro
Instructions
Slice bell peppers and onion, then add them to the crockpot.
Place chicken on top (or nestle between the veggies).
Sprinkle fajita seasoning over everything and stir gently to coat.
Cover and cook on low for 6 hours.
Once done, shred the chicken in the crockpot and mix well.
Serve in warm tortillas and add your favorite toppings.
Notes
To reduce liquid: Remove lid for the last 30 minutes of cooking.
For crispy edges: Broil chicken and veggies for 3–5 minutes before serving.
No fajita mix? Use chili powder, cumin, paprika, garlic powder, and salt as a homemade alternative.
