  • 45 medium russet or Yukon gold potatoes, thinly sliced

  • 1 medium onion, chopped

  • 2 cups shredded cheddar cheese, divided

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste

  • Fresh parsley or chopped chives, for garnish (optional)


Instructions

  1. In a skillet over medium heat, cook the ground beef and chopped onion until browned and no pink remains. Drain excess fat.

  2. Wash and thinly slice the potatoes (about ⅛-inch thick) for even cooking.

  3. Layer half of the potatoes in the crockpot, followed by half of the beef mixture and a portion of shredded cheese.

  4. Repeat layers with remaining potatoes, beef, and more cheese.

  5. In a bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and pepper. Pour evenly over the casserole.

  6. Cover and cook on LOW for 6–8 hours, until potatoes are tender.

  7. Sprinkle remaining cheese on top during the last 15 minutes. Cover until melted.

  8. Garnish with parsley or chives before serving, if desired.

Notes

Slice potatoes evenly to avoid undercooked pieces.
