Description

This Crockpot Hamburger Potato Casserole is the ultimate comfort food for busy weeknights. Layers of seasoned ground beef, tender potatoes, and melty cheddar cheese are slow-cooked in a rich, creamy mushroom sauce. It’s hearty, family-friendly, and ridiculously easy!


Ingredients

  • 1 ½ lbs ground beef (lean or regular)

  • 6 medium russet or Yukon gold potatoes, thinly sliced

  • 1 medium onion, diced

  • 2 cups shredded cheddar cheese (sharp or mild, divided)

  • 1 (10.5 oz) can cream of mushroom soup

  • ½ cup milk

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • Chopped parsley or chives for garnish (optional)


Instructions

  1. Brown the beef and onion:
    In a skillet over medium heat, cook the ground beef and onion until the meat is browned and no longer pink. Drain excess fat if needed.

  2. Prepare the potatoes:
    Wash and thinly slice the potatoes evenly for consistent cooking.

  3. Layer the ingredients in the crockpot:
    Start with half the sliced potatoes, followed by half the beef mixture, and 1 cup of cheese. Repeat with the remaining potatoes and beef.

  4. Mix and pour the sauce:
    In a bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and pepper. Pour evenly over the layered ingredients.

  5. Cook:
    Cover and cook on low for 6–8 hours, until potatoes are fork-tender and the casserole is bubbling.

  6. Final cheese topping:
    Sprinkle the remaining cheese on top during the last 15 minutes. Cover again to melt.

  7. Garnish and serve:
    Top with parsley or chives for a fresh finish if desired. Serve hot and enjoy!

Notes

Use a mandoline slicer for even potato slices.
Swap cream of mushroom with cream of chicken or celery if preferred.
